Fermentierter Tee

Fermentierter Tee oder postfermentierter Tee ist eine der 6 Grundteesorten. Nachdem die Blätter gepflückt und verarbeitet wurden, lässt man sie über einen längeren Zeitraum gären. Dadurch verändern sich Geschmack und Farbe des Tees radikal, da das Blatt von Mikroben zersetzt wird. Im Laufe der Geschichte haben Teeproduzenten viele Methoden zur Fermentierung von Tee entwickelt, von denen jede den Blättern ihren eigenen, einzigartigen Geschmack verleiht.
